summer greens, avocados, berries, and all the sea food we can eat.... all things that are great for the season. i couldn't agree more. i've geared the new summer dinner menu towards mostly fish and other seafoods myself. i've been making a lot of vi…

I'll second the salads for sure. Basically, there's a whole sequence of things I wait for and, upon their arrival, eat as much of as I can bear. First it was peas, then green garlic, now I'm in full-on fava bean mode and enjoying the first of the gr…

Derek - we were just in the Balkans (Croatia, Bosnia, Montenegro) where the food is just that: simple with strong, clean flavors. Loved the salad, which is typical to the whole region in various forms, of small cubes of tomato, cucumber and feta - m…

Summer Menus + Summer Flavors

After a great break, I am happy and excited to get back into the kitchen!
I've put together a new summer dinner menu, busting with summer goodness.
I'm really trying to highlight simple, straightforward, crisp flavors. Since the rain seems to have lightened up a bit, the gardens are getting some sunshine and all the local harvest is getting into full swing(including our own small garden at nicks). We are very proud to be partnering up with lots of local growers + producers to bring the freshest… Continue

what is a good meal really all about?

so many times, especially lately, we focus on only the food and how much it costs when talking about eating. as a chef, of course, that makes perfect sense to me, as the integrity of the ingredients and the economic structure of how it has to be payed for are of the utmost importance. and technique, of course, we can not forget about that either. but what about the way it all comes together? the unique combination of those ingredients timed and presented in just such a way, surrounded by just th… Continue

Hey Derek,
Thank you so much for all the amazing food last night. Your skills are quite impressive! That braised pork was seriously otherworldly, not to mention the risootto, the cauliflower soup, the mixed grill....Damn, I could go on. And I gotta say, your father is pretty cool, too!

Derek A fantastic experience last night and thank you for all your hospitality!
Marsha is honing her ice Cream making skills so the insight that one of your sous chefs gave to her only added to our night. Again thanks. Bob

Hi Derek,
I almost met you at Seth's a couple of weeks ago; I'm the one who left early with the insatiable, cheese-eating, child. Anyway, I noticed that you're having a dinner with wines from Portugal. Will you be attending the Portuguese wine tasting on the 22nd? It opens to the trade at 2:30 and there will be many wineries represented from numerous distributors. Yeah, I do work for one of those distributors now, so I can see how you could detect an ulterior motive here! But if you'd like to go, and didn't get a trade invite, feel free to let me know...

OK so the best burger is at Lili Marlene's, right? And fries, are they equal to the task? So it's now news here but I'll say it again: you do the best poached eggs and potato-fennel cakes. I also wanted to say that we've walked over to Nick's several times over the past couple of months, it's just three blocks from our apartment, and a great place for breakfast -- OK it's the best place for breakfast. Your servers are among some of the best I've ever seen. A pleasure to come in believe me, no matter how crazy it is they always seem cool, calm and relaxed. Complimenti!!
