Marc Guillotte at People's Liquor Warehouse in Apponaug is already underway with his 2010 in-store wine seminars.
Check out the schedule. I'm looking forward to the Dao reds, the Rhones, and the Chilean wines of course!

The state of Rhode Island is enforcing a law which prohibits retailers from holding off-premise wine tastings and events. It also restricts retailers and restaurants from holding wine dinners in conjunction with one another. The following is a petition to change this law.

Rhode Island’s liquor control board issued a bulletin stating that a “retail liquor store licensee cannot jointly promote or advertise a wine tasting or sampling event with a . . . restaurant.”

There is a recent bulliton sent out from the Rhode Island Department of Business Regulations which will, in all honesty curb and restrict wine dinners and events. It has 'interpreted' the current law on wine tastings to forbid retail accounts to aid in the promotion of any wine dinner or event, taking a large incentive for the distributors to be involved. It was written and enforced on behalf of a large do nothing retailer, no longer to be named who has no participation in true wine culture and…

I've just got to say and I'm sure I'm saying it to no one that Southern Italian wines are about to explode. Primotivo and Negroamaro are priced right and present amazing intensity if lacking in complexity. Add Sicily to the mix and we have a category of wine that, like Rhone in France, might rise up and rival the moneyed and collectible wines to the North. Has anyone had a Salice Salentino lately?

Loie Fuller is a beautiful restaurant that serves what seems to be upscale American food. We’ve heard wonderful things about it and were excited to try it!
We didn’t decide to go out to eat until 8:10, so we arrived at 8:20 on a Saturday night. We were told that a few tables were finishing dinner and that if they didn’t have dessert we’d be…

Ebisu is a Japanese restaurant, but not a sushi restaurant; they serve Yakitori (meat on a stick!), noodles and Shabu Shabu, which is “a Japanese variety of hot pot. The dish is prepared by submerging a very thin slice of meat or vegetable in a pot of boiling dashi (broth) and swishing it back and forth several times.”
We were there back in January, so afte…

While the two words "restaurant weeks" stumbles off the tongue, these two places are shining examples of what makes this food event so incredibly good. We tried Chez Pascal last week and New Rivers just last evening and can claim without hesitation that $30 bucks a person for such wonderful food should not be missed. Skip Boston and NYC is just not worth the travel headaches when you have such food venues right here.
You can read my review notes on Chez Pascal,…

After a great break, I am happy and excited to get back into the kitchen!
I've put together a new summer dinner menu, busting with summer goodness.
I'm really trying to highlight simple, straightforward, crisp flavors. Since the rain seems to have lightened up a bit, the gardens are getting some sunshine and all the local harvest is getting into full swing(including our own small garden at nicks). We are very proud to be partnering up with lots of local growers + producers to bring the freshest…

[What follow is a private email which Matt Jennings, the chef and co-wner (with his wife Kate) of Farmstead & La Laiterie, sent out to friends and industry associates about the Swine Flu and factory farming. Coming from someone who is both very involved in, and very passionate about, the world of food and it's origins, it is a telling read. We reprint it here on Providence Palate with Matt's permission.]

This is a hard email to write. Some of you are farmers. Some of you are chefs…

I'm currently a J&W student, with only 4 kitchen classes left. I do work full time, however it's not my passion. I'm having allot of trouble finding a job in the kitchen due to lack of experience. I previously worked at Gilette Stadium doing prep, and have done some volunteer events through J&W to build my resume. I'm a serious 31 year old mother of two trying to get my foot in the door somewhere. If anyone can help me out that would be very kind. Thanks!

Anybody know what happened to Parkside. I ate there a few years ago and the rotisserie offerings were pretty good. I went there recently and it was DREADFUL. The place was 1/2 full (1/2 empty) and the service was still terrible. The appetizers, particularly the calamari, were worse than average. I had an inedible duck served on the worst risotto I have ever tasted - totally amateur. I was surprised when the waiter took my full plate and didn't inquire as to what was wrong. Maybe that explains wh…

Got some relish and we put it on some bu-uns-
I'm... waitin' for the cart.
I'm talking about the Chez Pascal hot dog cart. I know it's still February, but it's sunny, warm, and I'm done with dirty snow and pot-holes. I want to sit in the sun, feel the breeze, listen to the creak of the swings and the wobbly sounds of ice cream trucks.
And I want the dogs.
That's all.

Welcome to my hell.
I have had to say goodbye to many of my favorite culinary items due to my misbehaving innerds. The less detail the better. It's like a Homer Simpson NIGHTMARE! No more beer, chocolate, pasta, rice, grains, bread, dairy,no processed stuff, no sugar, DEAR GOD! Here is a helpful site if anyone has to do this awful thing as well.
